We would like to add more custom fields to the projects. In addition to additional fields, we would like to ability to select the type of field we want each entry to be rather than them being pre-determined as they are now.

We added more Project Custom Fields in v15. We will not implement ability to change the type of a Custom Field.

Also let us reorder the custom fields. While this would seem difficult from a database perspective, as changes would be changing the database structure, there are workarounds.
Rather than having a fixed custom field set and types, convert to a single "custom fields" field. Within this field do a JSON string, the UI would then preset this as the custom fields.
The really nice thing about this, is they could be set on a PER ITEM and PER PROJECT basis. The main settings would be the template but then each item can be modified from there. Reapplying the template would change order of matching fields, add new fields in where appropriate, and move unique fields to the top/bottom.
This has another benefit, on a report you can just code for if the field exists then use its value however you want. The order of the fields becomes irrelevant, whether they exist or not is semi-irrelevant (you'd need to populate them on items).
